Oats are a nutritional powerhouse, especially when consumed at breakfast or lunch to maximise your energy for the day. They are rich in complex carbohydrates and soluble fibre, particularly beta-glucan, which slows digestion to provide steady energy and stabilise blood sugar. Heart UK notes that eating 3g daily of beta-glucan from barley or oats can help lower cholesterol, as randomised controlled trials have consistently demonstrated.
While most oat recipes are sweet—think porridge drizzled with honey or baked oat bars—opting for a savoury twist by adding protein and healthy fats could keep you satiated and sustain energy levels even longer. A Food52 chef has shared their simple recipe for tastier porridge oats featuring two breakfast favourites: eggs and avocado.
Though it sounds like an odd combination at first, the plain flavour of oats makes them a great base to replace your everyday eggs on toast.
One Food52 fan was wowed by the recipe, noting: "I’m not one to typically leave reviews but this savoury breakfast was the best surprise. I had some kimchi I wanted to use up, and this was the perfect application."
They explained that the ghee adds an "amazing flavour" to the dish and that they would "highly recommend" making it.
Ingredients
Add the oats to a saucepan with 3/4 cup of water and bring to a boil. Stir until the oats are softened. Season with salt and stir through to flavour the oats.
In a separate skillet, melt one tablespoon of ghee. Crack an egg into the ghee and fry until the edges are crispy, about four minutes.
Transfer the egg to a plate and sauté the greens with salt, black pepper, and garlic granules until just wilted.
Add the cooked oats to a bowl and top with the sautéed greens, kimchi, fried egg, and avocado slices. If using hot sauce, add a few dashes before serving.
