To start, he cuts his potatoes in half and places them in a pot. Then, he adds baking soda (specifying that it is not baking powder) and some salt. The trick is to add water and turn the heat all the way up.
As soon as the water starts to boil, he brings the heat down to its lowest setting and lets it just simmer for between 20 and 25 minutes. Doing this means that they will cook through completely without parts of the potatoes getting too soft before they are roasted.
Then, he drains them. You might normally rough up your potatoes, but the bicarbonate soda has already created a flaky exterior, so there is no need for this step in this recipe. When it comes to roasting, he preheats the oven to 180C (fan).
