We all have our preferences when it comes to how we enjoy our eggs, but perfecting them can be more of a challenge. While some swear by adding a tablespoon of mayonnaise and simply cooking them in the microwave, others prefer to stick to using a pan. But when it comes to cooking scrambled eggs, getting the right heat is essential to ensure they don’t turn out dry and rubbery.
Whether it’s poached, boiled, fried or scrambled, there’s nothing worse than overcooked eggs. From adding a squeeze of lemon, a touch of Greek yoghurt or replacing oil with butter, there’s plenty of tips out there when it comes to achieving more flavourful scrambled eggs. But if you’re struggling with the consistency of them, you might want to try doing this one thing before adding them to the pan.
While many simply whisk a few eggs together and add them to the pan to make a plate of scrambled eggs, you might find they’re coming out overcooked, and scrambled eggs are best enjoyed slightly soft and creamy.
If you’re looking for restaurant-quality eggs, instead of combining and whisking all of the egg at once, you should remove the yolk from the whites and cook these separately.
In an article for Allrecipes, recipe developer Mary Claire Britton shared that this method for buttery scrambled eggs couldn’t be “quicker, easier, more straightforward or more satisfying”.
After watching several TikTok videos of this method, Mary tried it for herself and said that scrambling the egg whites before the yolk results in a “buttery, runny yolk that is typically only achieved with poaching or boiling”.
Describing the results as “fantastic, flavourful and downright luxurious”, this method also saves you having to whisk your eggs beforehand, and you can simply crack the egg whites straight into the pan, with the yolk creating a “rich sauce” when combined.
Mary said it also “dramatically decreases the possibility of weird, snotty, undercooked bits” in your scrambled eggs.
How to make buttery and luxurious scrambled eggs
Place a pan over a medium high heat and add butter
Once hot, crack two eggs into the pan
Gently separate the whites from the yolk and scramble with a spatula
Break the yolks and fold them into the whites during the last few seconds of cooking
Instead of adding the eggs and seperating them in the pan, can also simply separate the eggs before adding them to the pan, and stir the yolks in at the end.
