Stop boiling cauliflower - it will have ‘lots of flavour’ if cooked another way




Vegetables aren’t the most amazing tasting foods in the world, but they’re a necessary evil that we eat to help stay healthy and to get the nutrition we need. While most vegetables may not be particularly exciting in flavour, the best we can do is try to jazz up the cooking a little to help improve the taste.

One vegetable in particular that is in sore need of a flavour boost is cauliflower. Served on its own, cauliflower has a delicate, mild and somewhat bland flavour that is a bit of a mixture between broccoli and cabbage. One of the most common ways to cook cauliflower is by boiling it, but this method can result in a loss of flavour. This is particularly the case if you leave it in the water too long, as it causes the release of sulfurous compounds that make it smell and taste unpleasant.

While boiling cauliflower may be easy and convenient, there is a much more exciting way to cook it that will help to lock in flavour and make it taste much more exciting.

Food experts say cutting a cauliflower into ‘steaks’ or wedges and then grilling it, or barbecuing it, will enhance its flavour, giving it a deliciously sweet and smoky taste.

The high heat of the grill causes the sugars in the vegetable to caramelise and sweeten the flavour, while the grill also gives off a smoky char and creates a crispy crust, which is much more satisfying than the soft, mushy texture you get when boiling it.

Cauliflower can be chopped into wedges - which are basically the florets - and then grilled, and as they’re small, this will take the least amount of time to cook. Or alternatively you can chop the cauliflower into ‘steaks’, which is basically a thick-cut cross section from the head of the vegetable.

BBC Good Food says: "Cauliflower can be cut into 'steaks' or wedges and grilled or barbecued so they pick up lots of flavour and char."

Some experts suggest either steaming or microwaving the cauliflower briefly first before putting it on the grill, as this helps ensure it’s cooked all the way through and saves you from burning it.
