Cakes will be light and fluffy if you follow baker's one simple step




When it comes to baking cakes, we all hope for the end result to be a light and fluffy sponge that dances on the tongues of those eating it.

Fortunately, an Australian baking expert has revealed one simple trick to avoid a dense, heavy cake. Brooki, known to her 2 million TikTok followers as @brookibakehouse said the key to a light treat is not over-mixing your batter.

She explained that by mixing your batter for too long either by hand or with an electric whisk, you are trapping excess air. This then leads to the cake deflating as it bakes in the oven.

Another factor to consider when baking is the temperature of the butter. If it is too cold, it will take too long to blend into the sugar and eggs which can cause over-mixing, butter brand Lurpak says. It suggests cutting your butter into cubes to get it to room temperature quicker.

Brooki told followers that when baking cakes, you should measure your ingredients with scales - rather than cups - as it is more accurate and will leave you with the same results every time. She also recommended using an ice cream scoop to measure out your cupcake batter, as this means each one will be the same size and shape.

Another of her tips is using instant coffee to “elevate the chocolate flavour” in chocolate cakes. You should also only sift ingredients that clump together, like icing sugar and cocoa powder, she said - so you can skip sifting flour.

When it comes to cracking eggs for making doughs and batters, Brooki suggests cracking one shell onto another egg. This will stop the shell from fragmenting, which results in having to fish the pieces out of your mixing bowl.

The baking expert also said that if a recipe calls for room-temperature eggs but yours are being kept in the fridge, you can simply place them in a bowl of warm water for ten minutes. However, you must make sure that the water isn’t too hot.

For anyone wanting to make their own chunky cookies that keep their shape in the oven, she recommends chilling the dough in the fridge overnight before baking.
