Make the best homemade chips by avoiding one type of potato, says Tom Kerridge




Top UK chef Tom Kerridge has been sharing some of his secrets and handy tips to make sure your home cooking is top notch. Tom, the brains behind the UK’s first two-Michelin star pub, The Hand and Flowers, has been paving the way for elite cooking centred around pub grub favourites.

He’s also developed a reputation for his triple-cooked chips, and he recently shared how you can recreate the best chips at home. The secret? It’s all about choosing the right potato.

In a recent Instagram post, fan Diane asked the best what the best potato for triple-cooked chips is, especially if you can’t buy Maris Pipers. Tom said: “It’s very, very difficult for triple-cooked chips because what you’re trying to do is trying to find the ones with the right starch and sugar content.”

Tom explained that the type of potato can majorly impact the quality of the chips, which is why they aren’t good during the summer. Potatoes which are picked and used during the summer, Tom explained, have too much sugar, making them go brown quicker before getting crisp.

He urged his followers to avoid using baking potatoes from the supermarket as they contain too much moisture. Tom said: “So you want kind of like, from a farmer’s market or a fresh potato you want a white one not a red one.

“Red ones are normally too floury. And maybe something like a Yukon Gold is very good. I mean, if Maris Pipers aren’t available, you want to try and find yourself a white potato that’s fairly, like from a farmer’s market, it’s dirty, like a proper spud.”

So next time you want to make triple-cooked chips, avoid any type of red-skinned potatoes. Also bear in mind the time of year you want to make them, as the different seasons can impact which type of potatoes are available.
