Social media creator Jo, who goes by This Mum Cooks, explained that she makes batch-cooked potatoes go further and create scrummy meals for all the family. In a recent TikTok video, Jo and her son rustled up some gnocchi using baked potatoes she’d made the day before. She wrote: “It is a great hands on recipe to get the kids involved with and a great way to use up leftovers as well. It is easy to tell when the Gnocchi is cooked because it floats to the top of the boiling water. We like to fry off the Gnocchi after boiling to give it some extra flavour.” All you’ll need is three ingredients, including two kitchen staples you probably already have in your fridge and store cupboard. Jo said: “One of the reasons I batch-cook jacket potatoes when I’ve got the oven on is because it saves so much time when making other meals throughout the week.” Pre-cooking the potatoes saved Jo over an hour of cooking time, so if you have the opportunity to cook ahead of time, do it. She even keeps the potato skins in the recipe to give the meal an extra boost of fibre. She continued: “Gnocchi is a great one to make with kids because it’s such a hands-on recipe. And I love it when my kids come and ask if they can make something specific, and I rarely say no.” To give the gnocchi extra flavour, Jo recommended frying the gnocchi in a pan to give it a little crisp. Bake your potatoes in the oven according to directions, or batch cook them ahead of time. Once cooked, break the potatoes apart into small pieces in a bowl, keeping the skins in if you’d like. Mash the potatoes with the back of a fork. Crack in one egg and pour in the flour. Use your hands to incorporate all the ingredients together. Once it’s come together, roll on a lightly floured surface into a long sausage, flattening slightly. Press down a fork onto the sausage, giving the gnocchi some nice ridges. Cut the potato sausage into small little pillows. Boil a saucepan of water, adding the gnocchi to it. The gnocchi will be done when it floats to the top.
