Jamie Oliver’s ‘super easy’ hungover noodles are perfect to make in less than 20 minutes




New Year’s Day can be a time when people are feeling rough from the night before or blue due to the holidays being over, but you can perk yourself up with some simple comfort food.

Jamie Oliver’s egg noodles is a mouthwatering dish that is “super-easy” to cook,according to the chef, and perfect for anyone needing something hearty to eat today.

This recipe takes less than 20 minutes to make and has been designed so you can use whatever ingredients are in your kitchen cupboard you can enjoy these delicious noodles in no time.

On his website, Jamie said: “This super-tasty, quick noodle recipe is perfect when you’re feeling a little down in the dumps.

“It’s all about that punchy dressing you toss hot veg and noodles through, which you then serve up with a fried egg and chilli sauce. Bend the recipe to suit the ingredients you’ve got to hand. Comfort in a bowl.”

How to make egg noodles for when you are ‘feeling a little down’

Ingredients (serves four) 

  • 500g of fresh or frozen broccoli
  • 250g of medium egg noddles
  • 200g of mangetout (podded peas)
  • Four large eggs
  • One Chinese cabbage
  • Three tablespoons of sesame oil
  • Three tablespoons of rice wine vinegar
  • Two tablespoons of low-salt soy sauce
  • Piece of ginger (five centimetres)
  • One clove of garlic
  • Salt and pepper
  • Olive oil
  • Hot chilli sauce (to serve)

Recipe 

To begin, prepare your fresh vegetables. Peel the ginger and garlic, then grate it into a large bowl.

Add the soy sauce, vinegar, sesame oil and black pepper to the bowl as well. Then mix it all together to make a dressing.

Cut up the cabbage and place it in a large pan filled with salted water. Add the broccoli and noodles then cook for two minutes.

After the time is up add the mangetout (podded peas) to the pan, then cook for one more minute so the total cooking time is three minutes.

Once everything in the pan is cooked, drain the water and pour everything into the bowl filled with dressing.

Next, add some olive oil to a frying pan and cook the eggs on a medium heat until cooked to your liking.

To serve the dish, divide the noodles between bowls. Add the egg on top of each bowl and drizzle with chilli sauce. Then, your super easy noodles are ready to eat.
