After browsing Michelin-trained chef Poppy O’Toole’s TikTok account, her caramelised carrots recipe stood out to me as users in the comments claimed they are “to die for”. My go-to way to cook carrots is to parboil them before throwing them in the oven to roast with a light coating of oil. However, Poppy veers away from the oven in her recipe and only uses the air fryer. There are no set measurements in this recipe. You simply use as many carrots as you like and eyeball the amount of butter and honey you’re using. For this recipe, I started by cutting off the ends of the carrots, peeling them and cutting them in half lengthways. Once done, put the carrots in the air fryer to cook for 10 minutes at 180 degrees - no need to preheat it. While the carrots were cooking in the air fryer, I grabbed a microwave-safe bowl and added some honey and butter with some salt and pepper before putting it in the microwave for one minute to melt. With the 10 minutes up, I put the carrots into the bowl of melted butter and honey and made sure to fully coat them. Then it was time to put the carrots back into the air fryer for a further 10 minutes - again at 180 degrees. Surprisingly, the carrots cooked very well in the air fryer - they were nice and soft inside but crispy on the outside and coated with the delicious sweet and sticky glaze. This method brings out the natural sweetness of the carrots and complements the salty, savoury flavours of roast potatoes and gravy. Not only did the carrots taste delicious cooked like this, parsnips made this way would also be fantastic. Any leftovers you may have can be chopped up and added to hearty casseroles, stews and pies.
