Delicious and easy air fryer funfetti cookies perfect for the kids - ready in 8 minutes




Baking is a super fun activity to do during the summer holidays with children or grandchildren, but some recipes can be complicated.

However, this recipe from Jane’s Patisserie is my favourite cookie recipe, easy to make and super delicious.

Whilst Jane bakes her cookies in the oven for 10 to 12 minutes, I often use my air fryer to bake, and they take just eight minutes.

What’s more, they turned out just as delicious and are a super fun bake with sprinkles scattered throughout.

The recipe made me 18 cookies and were ready from start to finish in around 20 minutes.

Ingredients:

300g plain flour

Half a teaspoon of baking soda

Half a teaspoon of salt

One tablespoon of cornflour

115g unsalted butter

100g light brown sugar

100g granulated sugar

One medium egg

One teaspoon of vanilla extract

250g white chocolte chips

75g funfetti sprinkles

Method:

Start by preheating the oven to 180C or 160C Fan before greasing and lining two baking trays with parchment paper.

Next, whisk the plain flour, baking soda, salt and cornflour together in a bowl and leave to one side.

Melt the butter slowly before mixing it with the two sugars, this should take two minutes with an electric whisk.

Add in the vanilla and egg and mix again until combined. Then add in the flour mixture and beat until it forms a cookie dough.

Simply mix in the white chocolate chips and funfetti sprinkles and beat again until distributed.

You can use sprinkles from the supermarket but these tend to lose colour in the oven so I purchased mine online as they are more vibrant.

Scoop the cookie dough into even balls and then bake them in the oven for 10 to 13 minutes, they take 12 minutes in my oven and eight in the air fryer.

When they come out they will still be soft but will harden as they cool, so leave them for five minutes before transferring to a cooling rack.

These cookies lasted for five days in an airtight container and were absolutely delicious and not too sweet.

The small amount of salt helped to balance out the sweetness and this recipe couldn’t be easier to make.
