‘Best ever’ chocolate chunk brownie recipe for a ‘squidgy’ bake - baked in 30 minutes




With so many chocolate brownie recipes online, it can be hard to know which ones will produce the tastiest results.

However, this BBC Good Food recipe has more than 2,500 five-star ratings, with many claiming this is the “best ever” one.

One review said: “This is the only brownie recipe I will ever bake with my kids.”

The recipe notes state: “A super easy brownie recipe for a squidgy chocolate bake to help you get a perfect traybake every time.”

These brownies cook in just 30 minutes and can keep fresh for two weeks in an airtight container.

Ingredients:

185g unsalted butter

185g best dark chocolate

85g plain flour

40g cocoa powder

50g white chocolate

50g milk chocolate

Three large eggs

275g golden caster sugar

Method:

Cut the butter into small cubes and break the chocolate into the same bowl before melting them together.

This can be done by using a heatproof bowl on some simmering water, or in the microwave for 30 minutes at a time, stirring in between.

Leave the mixture to cool and meanwhile, turn the oven on to 180C or 160C fan before greasing and lining a 20cm square tin.

Then, chop the white chocolate and milk chocolate carefully and set it aside.

Break three large eggs into a large bowl along with the sugar and using an electric whisk, whisk until thick and creamy.

This will take around three to eight minutes, depending on how quick the mixer is. When ready, it will be double in size and super pale.

Pour the cooled chocolate mixture into the egg and sugar mixture, gently folding together with a spatula.

Sift in the cocoa powder and flour before gently folding them all together, making sure not to overmix.

Finally, stir in the chocolate chunks until they’re dotted throughout, and then pour this into the prepared tin.

Bake for 25 to 30 minutes, until slightly crusty on the top but still soft, leaving to cool completely.

Cut into squares and then place them in an airtight container to keep them fresh for two weeks.
