How to make a daiquiri cocktail with one staple cupboard ingredient




The daiquiri cocktail has Cuban origins and is named after the town of Daiquiri on the southeastern tip of Cuba.

Known as a delicious alcoholic drink made from rum, the recipe was supposedly invented by American mining engineer Jennings Cox in 1898.

Jennings is said to have created the drink after running out of gin at a cocktail party and originally called it the Rum Sour before gaining popularity among locals.

While there are endless variations on this tasty beverage, Jamie Oliver's "cocktail maestro" friend, J Rivera has the recipe for anyone lacking ingredients.

This fruity version stays true to its roots by using jam as the main ingredient instead of whole strawberries.

Jam daiquiri recipe

Ingredients

50ml white rum

20ml freshly squeezed lime juice

10ml sugar syrup (or four tbsp caster sugar)

1 tbsp raspberry or strawberry jam

Soda water (optional)

Method

Make the sugar syrup by placing four tablespoons of caster sugar in a small pan along with two tablespoons of water. Turn the heat to medium-high, bring to the boil and let it bubble until the sugar has dissolved.

Remove the syrup from the heat and leave to cool. This will make more than is needed for one cocktail, but the syrup can be stored in an airtight jar and will keep for a few weeks.

Put the remaining ingredients in a cocktail shaker with lots of ice cubes and give it a good hard shake, then strain it into a coupe or martini glass.

For something a little lighter, pour the cocktail into a whisky glass over ice cubes and top up with a splash of soda, giving it a quick stir before tucking in. Garnish with a slice of lime, or a fresh raspberry or strawberry.
