To some, broccoli is a bland and boring vegetable, which is rather unfortunate due to its healthy benefits. The green veg is a superfood rich in vitamins C and K, high in fibre and other minerals and antioxidants that promote good health. Luckily, you can fix its bitter taste by simply switching from boiling to roasting and adding two simple ingredients chefs swear by.
Magi of RecipeTinEats has shared their favourite broccoli recipe inspired by Ina Garten. The food blogger boasted: "This is still the best damn broccoli ever. Roasted broccoli with crispy golden edges, finished with a drizzle of lemon juice, zest and a sprinkle of Parmesan. It’s so good, yet so easy, it’s like magic…"
This recipe from RecipeTinEats serves four people and takes a total of 35 minutes to prepare and cook.
To begin, preheat your oven to 220°C (200°C fan). Next, prepare the broccoli by cutting or breaking it into florets and placing them on a baking tray.
The chef also uses the broccoli stem; they explained: "The thick stem that most people just discard actually has terrific flavour, just like the small stem on each floret.
"Just peel the outer layer (vegetable peeler or stand it upright and use your knife), then chop and use in this recipe."
For the next step, drizzle with extra virgin olive oil, sprinkle with garlic, salt, and pepper, then toss to coat evenly and spread out in a single layer.
Roast for 20 to 25 minutes until the florets are slightly browned and crispy at the edges, while still tender-crisp.
Once out of the oven, immediately drizzle with lemon juice, sprinkle with lemon zest and Parmesan, toss to combine, and transfer to a serving plate.
To finish this dish, garnish with extra parmesan and serve it warm to your guests.
